Slow Cooker Pork Chops & Sweet Potatoes



This recipe comes from my friend Rachel.  We've been supporting each as we try to make healthier habits.  So she texted me a picture of her dinner, and described what she did.  It sounded like it was worth a try!  It's an all day long recipe.


Result: Justin wasn't a fan of the sweet potato, he said the chicken broth gave the potato a weird taste. I felt like the pork chops were a bit dry, but all in all - it was healthy, filling and easy to make.

Advice: Next time try white potatoes versus sweet.

Ingredients:

  • 4 pork chops (1" thick, bone-in)
  • 3 medium potatoes of choice
  • 1 medium onion
  • 1 can of chicken broth
  • salt and pepper
  • Monterey Steak seasoning

  1. Cut the potatoes into large chunks ( you could even try keeping them whole (poke some wholes in them) and dice up onions.  Put the potatoes in the bottom of the slow cooker pot.  Add diced onions on top.  Sprinkle salt and pepper.  Pour can of chicken broth on top.  
  2. Season pork chops with Monterey Steak seasoning, salt and pepper.  Place the pork chops on top.
  3. Cook on high for 4 to 6 hours or LOW for 8 to 10. ( I say do 8)
