Chris' Mexican Meat {for tacos and nachos}



So, I didn't want to have this recipe hidden under my tater tot nachos - because this is the secret [not anymore!] recipe that I use for my mexican dishes (like tacos and nachos).


This is actually my recipe --- it's evolved over the years.

Ingredients:

  • 1 # of a ground meat (chicken for a healthier option)
  • 1 small onion (or 1/2 cup of diced)
  • 1 teaspoon minced garlic
  • 1 packet of taco seasoning (+ 1/2 cup water)
  • 2 tablespoons of cumin
  • 2 tabelspoons of oregano
  • 1 small can of diced green chiles
  • 1 small can of diced jalapenos
Directions:

Preheat a large saute pan until hot. 

Start to brown the meat.  As the meat is browning, dice your onion and mince your garlic. Open the cans of green chiles and jalapenos.

Once the meat is browned, add the onions and garlic in.   Cook the veggies and meat until the onions are tender.  Add the seasonings and mix through the meat.  Once the seasoning is mixed through, put some aside for your kids or for those that do not like spicy food.

Add the green chiles and jalapenos to the meat.  Once they are heated through - serve them as your meat in nachos or tacos.
