Easy Jambalaya Rice & Sausage
Serving Size - 3 to 4 HUNGRY people (otherwise cut the recipe in half)
- 2 boxes of Jambalaya Mix (I favor Zatarain's brand) or 1 Family Size (which I can never find when I'm looking for it!)
- 1 cooked sausage (14 oz. package)
- 2 tablespoons of vegetable oil
Slice the sausage into circles, and then cut the circles into halves. In a medium sauce pan (3 quart size), combine 2 1/2 cups of water, vegetable oil, sliced sausage and the 2 boxes of rice.
Bring to a boil, and then COVER and cook on LOW for 25 minutes (or until water is absorbed). Let it sit for 5 minutes to cool or eat immediately - being ready to burn your mouth - while blowing your mind.
