Oven Baked Beef Stew

You know it's been a long time since I've made this recipe when I've managed to add a title and copyright stamp to the picture.  I've long given up on making the time to do those items, since my time is very limited.

This is a delicious meal for a
chilly day.  However, this requires some lead time.  It requires you to bake it for 2.5 hours in the oven.  So this can change the way you look at this recipe.

Results: It's delicious.  Very hearty, so one of these recipes makes a 9x13 dish and that's a lot.  The boys' loved everything about this.  So it's definitely kid friendly.

Recommendations:  The stew meat is perfect for this and you can use baby carrots. The sauce sounds disgusting with cream of celery and ketchup but it's delicious.

Recipe adapted from Life in the Lofthouse.

  • 2 lbs. beef stew meat
  • 2 (1 oz) packages of Dry Onion Soup mix
  • 1/2 teaspoon Paprika
  • 5 medium Potatoes, peeled and diced into 1 inch pieces
  • 1.5 cups of baby carrots
  • 1 small Onion, chopped
  • 2 cans Cream of Celery Soup
  • 1 cup Ketchup

Preheat your oven to 325°F.  Grease 9x13 dish (glass and not metal).  Add the meat to the dish.  Mix the meat with the soup mix and paprika until it's well coated.

Top meat with prepared vegetables (see ingredients list). In a small bowl, mix the cream of celery soup and ketchup.  Once mixed together and it to the top of the vegetables.

Cover with aluminum foil and bake for 2.5 hours.  Serve with buttered bread.

Enjoy!
