One Pan Chicken Parmesan & Roasted Zucchini


You're probably not surprised but I found this on Pinterest. Sad thing is, this is my result.  My Pinterest stuff never turns out.  Keeping it short and sweet, Josh requested spaghetti - which for the longest time I thought he enjoyed my sauce but let's be honest he only wanted noodles. LOL. So I decided to make this one pan meal and boil noodles for an additional side. 

Result: Pretty easy, delicious and I gotta admit it was fun to make. The panko (as usual) is delicious and adds a nice crisp.

Advice: Make sure to keep the zucchini sliced thin (although it browns easier). Filet the chicken just so it cooks in time. Fresh basil isn't necessary.   There seems to be a lot of steps but it does go smoothly.

Ingredients:
  • 1.5# chicken breast (boneless/skinless)
  • 1 cup panko bread crumbs (plus 1 tablespoon of italian seasoning)
  • 1/2 finely grated Parmesan cheese
  • 1 large egg
  • 2 Tablespoons of olive oil
  • 1/2 teaspoon garlic powder
  • 3/4 cup marinara sauce (I had a jar of sauce in cabinet)
  • 3/4 cup mozzarella cheese
  • 1 large (or 2 small) zucchini
  • dry basil leaves or you can use fresh
  • salt & pepper

Directions:

  1. Preheat oven to 450°F. 
  2. Get a rimmed baking sheet and spray it with non-cooking spray. 
  3. Put the panko bread crumbs, Parmesan cheese, and salt and pepper into gallon size bag. Put half the olive oil into the bag. Crunch the bag so the oil combines with the crumbs. 
  4. Whisk the egg in a small bowl, dip the chicken in the egg then shake chicken in the bag of crumbs.  Make sure to cover all sides of chicken. 
  5. Put the chicken down the middle of the baking sheet.  Continue into all the chicken are on the pan. 
  6. Without zucchini yet, put in the oven and bake for 15 minutes. 
  7. During this baking, slice zucchini.
  8. Add to ziplock bag with olive oil and garlic powder.  Sprinkle salt and pepper within bag and zip it shut.  Shake til all pieces are coated.
  9. Once 15 minutes is up, flip chicken and add zucchini around the chicken.   
  10. Bake 10 more minutes (or when chicken is fully cooked (165°F)).
  11. When chicken is done, pull it out and turn on roaster.
  12. Spready 1/4 cup of marinara sauce on top of each chicken and sprinkle with mozzarella. Broil until cheese is melted. 
  13. Top with a sprinkle of  basil. 
  14. Serve with freshly boiled noodles or a side salad and enjoy!
