Korean Beef


This is a fun recipe.  It's a kid's favorite and it's easy to make.  Other than the green onions, you will probably have the ingredients in your kitchen!  Plus it's fast --- great for a week night.



Recommendations - Double the sauce ingredients(or at least 1.5 of the amount). I will share the amount that I make, so don't worry about doubling the recipe below.   It's not healthy to do so but it's delicious.  Or you could serve it with cauliflower rice.... and here is a picture (looks convincing, right? Pretty darn good! Here's a recipe! )

Recipe adapted from: Damn Delicious

Ingredients:
1 pound ground chicken (or your favorite meat)
1/2 cup brown sugar
1/2 soy sauce (reduced sodium would be good)
1 teaspoon ground ginger
2 teaspoons of sesame oil
pinch of crushed red pepper
1 tablespoon vegetable oil
3 cloves garlic, minced
1 bunch of green onions, thinly sliced

In a large skillet, add the vegetable oil and heat to medium/high heat.  Add garlic and cook for about 1 minute.  Add meat and then crumble. Brown the meat.

In a medium size bowl, mix the sugar, soy sauce, red pepper and ginger together.  Once meat is browned, add the mixture slowly in.  Sprinkle in some of the green onions and stir it all together until heated through.

Serve with white rice or cauliflower rice -- and enjoy.  I always top with a good amount of green onions, too! Enjoy!
