Slow Cooker Beef and Broccoli {Freezer Meal}
Life has been super busy lately, that I've been setting aside time to make freezer meals. This is one of them. It's one of those that you throw together in a freezer bag, pull out to thaw overnight (or even in the morning) and cook in a slow cooker ALL day.
Result:
If you like Korean Beef, you will enjoy this. It's delicious!
Recommendations: You can add the broccoli into the same bag as the meat (just put it as the last item in the bag). It can be cooked on low for up to 8 hours (however, this has only been tested with beef stew meat and nothing thinner). If you forget the corn starch, it's not a big deal - as the sauce will just be more watery.
Recipe adapted from: Mommy Savers
- 2 lbs stew beef (or you can use other cuts of meat)
- 1 can beef broth
- 1/2 cup soy sauce
- 1/3 cup brown sugar
- 1 tablespoon minced garlic
- 1 tablespoon sesame oil
- 2 tablespoons cornstarch
- 1 bag frozen broccoli florets or 2 cups fresh broccoli
- 2 cups white or brown rice, prepared
Combine all the ingredients into a slow cooker (except for broccoli) and cook on low for 4 to 6 hours. Add broccoli for last 30 minutes or until cooked through.
Freezer Directions:
Combine all ingredients (except broccoli) into a freezer gallon bag. Squish the bag until all ingredients are evenly covered. Add broccoli into bag and squeeze all the air out of the bag; Seal the bag.
Freezer for up to 3 months.
Take out night before (or morning of) and cook in slow cooker for 6 to 8 hours. Enjoy!
