Chipotle Steak Shishkabobs {Freezer Meal}


So I sent Justin to go check on the shishkabobs as they were grilling, and he came in raving about the flavor.  He literally said "These are delicious --- what's on them? These are a keeper."  I couldn't remember what exactly was on them since they were a freezer meal - made a week before.  But I told him: "These might be good for camping." And he said "Might - you mean they will."  So he approves.


Results:  They were delicious.  They aren't too spicy. The steak seasoning is important.  We really enjoy both the Original and Spicy version of McCormick's Steak Seasoning.  However, I would first try it with the Original.

Recommendations: I used a cheaper meat (stew meat) and they were just fine.  I cooked them to a Medium level and made sure not to go any more as they would be fairly chewy. I'm sure it would have been even better with a more expensive meat, but it's not necessary. I would also recommend sprinkling the steak with the steak seasoning before putting it in the bag.  I would recommend adding--- maybe 1 more (3 total chipotle peppers) for each bag of meat.   I would even add in a little bit of the adobo sauce. 





Recipe From: Ms. Simplicity 

Ingredients:
  • 2-3 Chipotle peppers, chopped (include some of the adobo sauce)
  • at least 2 Tablespoons of McCormick Steak Seasoning
  • 1 lime squeezed and zested (zested not necessary)
  • 3 Tablespoons olive oil
  • Cubed steak
Sprinkle the steak with the steak seasoning.  Set aside (or into a 1 gallon freezer safe bag).  Add the olive oil, lime juice and chipotle peppers into a gallon freezer safe bag.  Add meat.  Squish the meat around until evenly covered with the ingredients.  Squeeze the air out and seal bag.  Place in the freezer for up to 3 months or in the refrigerator for at least an hour. 

For freezer/grill instructions:
Pull out at least the night before (or even 2 nights); if you forget, feel free to defrost for half the time in the freezer (just enough that you can break the meat pieces up). 

Place on a metal kabob stick and grill until it's cooked to your desired steak style (IE: Medium, Medium Rare, etc.).
